Once a friend gave us a big cheese, his dad made them. There was so much that we couldn't finish it.

I don't think I've ever seen such a big roll of cheese. It looks like a chair cushion.

What are those white strings for?

One of my favorite jobs was working in the dairy of a sheep farm. We made 9 varieties of cheese. But the big wheels of hard cheese were the most labor intensive. Lots of steam and sweat and we had to work very fast to get the hot curds into the baskets and then salt and turn them . . .

I'd love to see this Dutch cheese market!
